Precision, held quietly

Head chef Devinder Singh cooks from a single ledger of British growers — a Kentish orchard, a Cornish day-boat, a Cumbrian flock. Nothing arrives frozen; the menu shifts whenever a grower's week does.

Devinder grew up in the kitchens of Amritsar, learning to coax flavour from spice long before he learned to plate it. After a decade across the Michelin houses of Mayfair and Kyoto, he joined Anaya to write a single seasonal menu — one that treats British produce with the discipline of a Punjabi thali.

Every dish on the tasting menu passes through his hands each evening. Nothing leaves the pass that he has not tasted, and nothing arrives at the door that a grower has not grown for the house.
